Why low and slow wins

Gentle oven heat gradually melts the collagen inside a tough cut like chuck into gelatin. That’s what gives pot roast its rich, spoonable texture. If the oven is too hot—say, above 350°F—the liquid bubbles hard and the meat’s muscle fibers tighten and squeeze out moisture. The result is dry, stringy beef, even though you braised it.

Match the temperature to your time

If you remember just one number, make it 300°F. It works for a standard three- to four-pound roast and usually lands dinner on the table in three to four hours. Every oven runs a little differently, and the size and shape of the roast can shift those timings by thirty minutes or more. The important thing is keeping the liquid at a gentle simmer, not a rapid boil. Peek occasionally, and add a splash of beef broth if the pot looks too dry.

When is the roast actually done?

Unlike a steak, a pot roast isn’t finished at a specific internal temperature. It’s done when a fork can pierce the meat with almost no resistance and twists away easily. Braised beef usually reaches an internal temperature around 200°F by that point, but the fork is the test that truly counts.
