By mid-afternoon, plain water can start to feel like a chore. These recipes for infused water turn it into something gently flavored and naturally sweet—no syrups, powders, or special equipment required. A pitcher, cold water, and a few pieces of fresh produce are all you need.

The principle is simple: cold water slowly pulls the taste from fruit, herbs, and vegetables. Once you learn one basic formula, you can swap in whatever looks good at the store.

The Basic Recipe

For every 8 cups (2 quarts) of cold water, aim for about 1½ cups of something mellow, like strawberries, cucumber, or peach. Citrus and ginger are more assertive, so one medium lemon or a 1-inch piece of ginger is plenty. Add 6–8 fresh herb leaves (mint, basil, or sage), and slice everything thinly—more surface area means more flavor in less time.

Ingredients

  • 8 cups cold water
  • 1½ cups sliced strawberries, cucumber, peach, or melon; or 1 medium lemon, sliced
  • 6–8 fresh mint, basil, or sage leaves, or a 1-inch piece of ginger, sliced
  • Ice, to serve

Method

  1. Press fresh herbs and very soft fruit lightly against the inside of the pitcher with a wooden spoon. Two or three presses are enough to release their aroma.
  2. Add the fruit, herbs, and water. Stir once.
  3. Refrigerate for 2 to 4 hours. Taste at the 2-hour mark, then decide if you want it stronger. If you steep longer, pull out delicate herbs like basil after about 4 hours so the flavor stays fresh.
  4. Serve over ice, straining into glasses if you prefer a clear drink. The water keeps for up to 48 hours in the refrigerator.

Easy Flavor Combinations

Each of these makes a full 2-quart pitcher using the method above. Think of them as starting points, not rigid rules.

  • Strawberry-Basil: Hull and slice 1½ cups strawberries and use 8 large basil leaves. Strawberries bring a natural sweetness that pairs well with the herb’s bright finish.
  • Cucumber-Mint: Thinly slice half an English cucumber and add 12 mint leaves. English cucumbers have thin skins, so there is no need to peel them first.
  • Lemon-Ginger: Slice one medium lemon and three thin coins of fresh ginger, then remove any lemon seeds first—they become bitter after a few hours.

🍋 Note: If the pitcher is still half full after about 12 hours, strain out the fruit and herbs. The water keeps its flavor, but the solids start to break down and can make the drink taste bitter by day two.

There’s no wrong way to infuse water. Choose one of these combinations, taste it after a few hours, and adjust the next batch to your liking. The best recipe is simply the one that makes you reach for another glass.
