You’re at the meat counter, and two steaks look almost identical except for one detail: a bone. That detail is the whole story of ribeye vs. rib steak. Both come from the beef rib primal, the well-marbled area between the chuck and the short loin. A rib steak is cut with the rib bone still attached; a ribeye is the same steak after the bone is trimmed off. If you see a label that says “bone-in ribeye,” that’s a rib steak by another name.

That one bone changes how long the steak takes to cook, how much you pay per pound, and how it looks on the plate. Flavor-wise, though, it’s nearly a tie.

Which one should you take home?

Choose a ribeye when you want an easy, neat steak. It cooks quickly, slices into clean portions, and works well in dishes that call for sliced beef. For a regular Tuesday dinner, it’s hard to beat.

Choose a rib steak when you’re feeding guests or just want something a little more dramatic. Ask your butcher for one cut about 1½ inches thick, sear it over direct heat, then move it to the cooler side of the grill or finish it in the oven for even cooking.

🌡️ Note: A thermometer takes the guesswork out of either steak. Pull it about 5°F before your desired serving temperature, then let it rest loosely under foil for 5 minutes.

Above all, don’t overthink it. Ribeye and rib steak are the same excellent beef, separated only by a bone. Let the size of your appetite and the mood of your evening make the call.
